Miso Greens & Beans & Caramelized Mushrooms:
INGREDIENTS are in CAPS
- Heat a quarter YELLOW ONION in 2tbsp of OLIVE OIL. Cook until translucent & fragrant. (2-3min)
- Add two large bunches of HEARTY GREENS (I chose kale) cut into strips (remove middle stem if necessary) & 1/2c water to the pan. Cook until greens become dark & wilted. (2-3 min depending on green) Remove from heat.
- In a small bowl, add 3tbsp WHITE MISO PASTE, and the cooking liquid from the pan. Stir until you have a thin paste, & no clumps.
- Add miso mixture, with 1 minced GARLIC CLOVE to the pan with your greens and return to a low heat.
- Add 1&1/2cup WHITE BEANS (any kind!) or 1 CAN and gently mix to integrate with the miso and greens. Remove from heat.
- In a seperate pan, high heat, add a bit of OLIVE OIL, sprinkle of SALT & PEPPER, 8oz SLICED MUSHROOMS and a sprinkle of PINE NUTS (optional) and let them sizzle until seared, flip, sizzle, sear. (about 5mins/side or until caramelized & pine nuts are toasted)
- serve over FETTUCCINI noodles
